The grapes were picked at optimum ripeness in the middle of April and allowed to soak on skin for a couple of hours then gently press off. The free run went to stainless steel and was co fermented with a selection of special yeasts. This produced the pronounce pear and fig flavours. The pressings went to old French oak, this encourage a more complex full bodied pallet with a softer finish to the wine. A great wine for a sunny afternoon and a Caesar salad!
