The winemaker is aiming for something a little bit different when creating the Reserve Sauvignon Blanc in 2016. They decided to transfer the ‘free run’ portion of juice from the press, straight into some seasoned oak barrels to complete a wild fermentation. This was done to extract as much funk and texture into the wine as possible… and we think they succeeded.
Passionfruit and gooseberry flavours combine with a smoky mineral edge making this wine essential for anyone demanding a little bit more from their Sauvignon Blanc. The full solid wild fermentation has imparted an abundance of complexity and mouth filling texture providing lovely length right across the palate.
