Don David is the reserve range of Michel Torino made up from the best grape selection. The aim in the vineyard is to gain concentration and to maximise fruit extraction. To obtain concentration and balance only vines older than 20 years are harvested. The harvest is manual, putting clusters in small 22 kg boxes. Pre-fermentation macerations takes place over 3 days at 5° C. Intense works is done during fermentation to gain good structure using 85% of selected yeasts. Post fermentations are handled up to a maximum of 30 days. After spontaneous malolactic fermentation, 70% of the wine is aged in small barrels of both American (40%) and French (60%) Oak for 12 months.
Beautiful reserve Syrah from the Michel Torino reserve range of Don David. This wine is all about intensity. The colour is crimson red, profound with purple borders. The aroma is full of spicy notes, cassis and clove. Vanilla aromas persist at the end. A fruity mouth, full of cassis with round and sweet tannins. The barrel spell contributes with warming vanilla notes.
