Legend has it that during the middle ages, a village called Saint-Ambroix, located in the Languedoc region. Had such a great harvest of grapes one year. The mayor of the village decided to organise a festival to promote the wine and the village. To make sure that plenty of people would come and drink the wine of the harvest, the mayor promised they would see a flying bull!… The wine was drunk... and so lives the … LEGEND OF VOLO BIOU!
“Volo Biou” is the Occitan translation for “flying bull” the language spoken in Southern France

An expressive, aroma of black cherry, wild blackberry and gingery notes. A fruit forward palate of black fruits and gentle spice. Silky, soft and gentle tannins.  A touch of liquorice and white pepper on the finish. Medium bodied, softly structured  and highly aproachable.
