Fruit hand harvested and fermented at cool temperatures in stainless settle tanks after gentle pressing. Only the best strains of yeast have been used, most suited to the distinctive aromatics of Marlborough Sauvignon Blanc. Lees ageing (6 months) prior to bottling has developed midpalate weight adding to the wine’s intense fruit characters.
