"Parcels of fruit were fermented separately in large format French and German oak barrels. Malolactic fermentation was introduced to balance the wines acidity. After maturing in barrel for 9 months the wines were tasted and blended. Further aging in tank on light lees added greater complexity before bottling. This Marlborough Chardonnay shows wonderful complexity, fresh aromas & flavours of citrus, stonefruit and hints of Hazlenuts with a long, focused finish"

"This is a youthful wine that’s delicious drinking now, but it will also reward further with cellar age.Pōtiki, meaning ‘last born’ in Maori, is blended from a selection of newer plantings and some of our more established blocks on the Martinborough Terrace.Hand-picked fruit was whole bunch pressed, with the unsettled juice fully barrel fermented in Burgundy 300L puncheon barrels (20% new) using indigenous yeasts. Partial malolactic. Aged in barrel on lees for 13 months.  Barrel fermented in 300 litre puncheons with indigenous yeasts. The 2020 vintage Is concentrated and detailed, balanced with vibrant acidity. The aroma is a wonderful blend of fennel notes, rock melon and citrus blossom. The palate is focused, with a salty, mineral line that finishes with flavours of fresh white almond."

Bay and Barnes (Australia) 2023 Chardonnay

Made by the good folks at Giesen Wines from selected Australian fruit.

Following harvest, fruit was gently pressed before settling. Specially selected yeasts were used to start fermentation. From there the wine matured on French oak for eight months with regular lees stirring to maximise flavour.

"Our first Levels Chardonnay that was 100% sourced from the Gunn family vineyard on Ohiti Road where they grow the highly sort after 548 clone of Chardonnay. This vintage is from that same sought after site. The grapes were hand-picked in immaculate condition on the 25th and 26th February. Only the initial “free run” portion of the juice was allocated for our super premium ‘Levels’ Chardonnay where it was placed into fine French oak (35% new) to undergo primary and secondary “malo-lactic” fermentation. A mix of ‘Wild’ and ‘Inoculated’ yeast was used to ferment the juice to help create a more complex and interesting wine."

"Our 2021 Selection Chardonnay is another stunner. 100% handpicked. 100% whole bunch pressed and fermented in our finest French oak barrels. 2021 was a stellar vintage in Hawke’s Bay and made for a relatively early start to harvest. The lions share of the fruit for this wine was hand-picked on February 25th and 26th. After cold setting the juice, we transferred it to both large format and traditional sized barrels where it spent the next 10 months.

The nose is filled with brioche, peach, melon and grapefruit pith with hints of toasted nuts and spice. On the palate the wine is seamless with many different flavours flowing nicely together. All the hallmarks of an ultra-premium Chardonnay are present – the fruit, oak and MLF flavours coalesce together nicely. Hawke’s Bay Chardonnay at its absolute pinnacle for what is arguably a very low price for this kind of quality. Get in now before the boss decides to put the price up! "

After harvesting, fruit was pressed, settled and racked in Hawke’s Bay to preserve the quality of the fruit before transport to our Marlborough winery.  A portion of the blend was put to barrel (1,000L German Fuder oak barrels & 300L French oak) with the balance fermented in tank. The wine was inoculated with classic Burgundian Chardonnay yeast and aged on lees in French oak for 6 months prior to blending
