A pretty bouquet with light stone fruit, honey and defined toasty autolysis. The fine mousse leads to flavours of brioche, white peach, soft citrus and green apple. Uplifted and vibrant with delicate autolysis followed by a silky, long dry finish. This is a wine with elegance and finesse.

Cava made in the Champagne method. Bright, soft fruit flavours. White peach, apple, pear, melon and lime fruit on the nose, with a gentle creamy smokiness from the time this Cava spent on its lees. Rich flavours of apple, honeydew, peach and mineral notes on its fruit-forward and nicely balanced palate, with a clean, tropical fruit infused finish.

The traditional Cava grapes come from vines of around 50 years old and are naturally low yielding of high quality fruit. The wine spends 18mnths on the lees, building complexity.

"A sparkling wine exuding elegance and finesse. Pale yellow with a bouquet of green apple and hints of lime and brioche. On the palate, this is flirtatious and moreish. Enhanced by an invigorating cool, creamy acidity. Focused, cool and crisp with beautiful balance and length. Hand-picked, 8th to 14th March. A selected blend of 62% Pinot Noir and 38% Chardonnay. Bottle fermented and aged on lees. Riddled and disgorged by hand from early 2018 onwards at Quartz Reef. The winemaking was very much in keeping with the traditional practices of the Old World. The winemaker, Rudi Bauer, has combined these techniques, and his own personal understanding, to create this wine."

Vincent Baron (France) Cremant De Bourgone Brut NV

This Cremant from Vincent Baron is a classic a blend of Chardonnay and Pinot Noir from carefully selected fields. The must from the two grapes is vinified separately and then mixed with a little wine from previous years' harvest before it is bottled to undergo the classic second fermentation in a bottle. This process takes 9-11 months after which the wine gets its Champagne stopper and a dosage of between 6-10 grams per. liters.

The result is a Crémant with small lively bubbles and a lovely fresh flowering aroma supported by green apples and hints of toasted bread and nuts. Then full-bodied and despite its dosage still with a completely dry feeling in the mouth.
