A variety that often plays second fiddle to Malbec in Argentina, but this voluptuous wine from Salta in north west Argentina is not to be overlooked. The (very) sunny Calchaqui Valley - the vineyard gets 350 days of sunshine a year - is where the vineyards are located 70% of the wine is aged in oak barrels giving the body a richness and vanilla oak character whilst primary flavours of blackberries, Morello cherry and pepper and a nice roundness of feel are contributed by the remainder aged in stainless steel.

The grapes are destemmed but not crushed. Fermentation takes place in small stainless steel open fermenters adapted to the size of individual vineyard parcels. Careful hand plunging takes place twice daily. Optimum temperatures are sustained over the course of fermentation to ensure the true expression of the terroir; rich flavours, colour and aromas are drawn out. 

The wine is gently basket pressed in individual vineyard parcels over the course of several hours. Our basket press combines state of the art technology with traditional winemaking.

‘The Château’ Cabernet Sauvignon displays deep, rich purple and red hues. The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from two years’ maturation in a combination of new and seasoned French oak barrels.

The grapes for this year’s The Chateau Cabernet Sauvignon were grown on the sandy loam soils of blocks 12 and 16 of our Bethany vineyard which was first planted in 1960.

The grapes were destemmed, but not crushed, and spent seven days on their skins in open fermenters with twice daily hand-plunging and pumping over of the cap to more gently extract colour, flavours and tannins. This was followed by careful basket pressing and malolactic fermentation in a combination of new and seasoned French oak barrels prior to eighteen months’ maturation in our cellars.

Lifted aromas of blackcurrant, blackberry and vanilla are accompanied by vibrant, dark berry fruits on the palate. The finish is long with fine-grained tannins from sixteen months maturation in a combination of new and older French oak hogsheads.
