A delicate and beautifully balanced sparkling wine, inspired by the natural harmony of Cathedral Cove. Its radiant gold hue reflects the sun shimmering across the Cove’s turquoise waters — a prelude to the elegance within. Aromas of stone fruit and freshly baked biscuit rise like a gentle sea breeze, while extended lees aging imparts rich, yeasty complexity.

On the palate, layers of ripe stone fruit unfold over a creamy mousse, reminiscent of frothy waves meeting the shore. A hint of sweetness is perfectly balanced by a crisp, refreshing acidity, finishing long, dry, and luminous — like the last golden light over the sea.

A medium bodied, everyday drinking red with aromas of red berry and damson fruit. Fresh and lively on the palate with ripe berry fruit balanced by tangy acidity and quite firm tannins leading to a warm, spicy finish.

Fermentation took place at 28 to 30C with 10 days on the skins and daily pumping over. After malolactic fermentation the wine was transferred to Adria’s cellars where it is bottled.

Ideal with simple pasta tossed in butter and Parmesan or with tomato based sauces

Pale salmon-pink colour.  The nose is soft and clean with gently filling and delicate aromas of yellow stonefruits and red berries, revealing herbal elements. Dryish to taste, light red fruits, currants and herbal flavours are supported by soft, creamy textures. The flavours fade, and lead to a light finish.  This is a clean, fresh and gentle cremant rose.

Tasting Note - Lifted aromas of tropical fruits and light floral notes generously take over. The palate consists of fresh and clean characteristics with a mouth-watering and lengthy finish. Alc: 12% 

Winemaking - The grapes for this wine were sourced from three of our Hawke’s Bay vineyards – Riverview, Kinross and Campbell’s Brook. The grapes were transported to our Riverview winery where they were pressed to stainless steel tanks and fermented using a range of yeasts. The resulting wines were transported by road tanker to our Katikati winery for blending, finishing and bottling.
