The 2019 Holly South Series Pinot Noir ripples with elegance and finesse reflecting the warm growing season experienced throughout the Wairarapa region. Bold aromatic expressions of wild flower, red berries, spice and herb give way to a fresh palate with generous length and graceful oak.

In the winery, the different batches of fruit were processed separately so that the individual characters could be retained. Further complexity was added by incorporating techniques such as plunging and pumping over to ensure optimum flavour extraction from the skins. Prior to fermentation the grapes were left to cold soak for 3 days. Different yeast combinations were used, along with wild yeasts, to add even more depth of flavour. The different batches were then left on skins for 21 days before being pressed off into barrel. This wine also incorporated some whole cluster fermentation, which has lifted the aromatic profile with floral and spice notes. Once in barrel, the wine was aged for 12 months in oak (23% new) before the final blend was put together

Mt Difficulty (Otago) 2019 Bannockburn Pinot Noir

Surely one of the best known names of Central Otago Pinot Noir and for very good reason. This gorgeous Pinot from the 2019 vintage again shows exactly why they have such an enviable reputation. A wonderfully fragrant nose of dark fruits, wild herbs with underlying gentle floral notes, a concentrated palate and silken tannins make for an absolute classic.

"Our 2019 Pinot Noir opens with luscious dark red and black cherry, dried wild herb florals, with a touch of savoury brown spice. As the wine dwells on the palate layers unfurl, revealing silken texture. Fine textured structure rises gracefully whilst being surrounded by a crunchy tang of acidity and a slight mocha note with some brown spice more vibrant red cherry notes on the long finish. For a full expression of terroir, we co-fermented different clonal lots from the same vineyard, while keeping vineyards separate. About 75% of our ferments were de-stemmed only; the remaining quarter contained 15-40% whole clusters. Fermentation with indigenous yeasts lasted an average of 7 days with daily punch downs. The wine stayed on skins for a further 7-9 days post-dryness, after which it was pressed off to barrel where it resided on full lees for 12 months. It underwent malolactic fermentation in the spring, was racked out of barrel in late autumn and filtered but not fined prior to bottling."

The Donaldson family are massive influencers on the wine industry in the Canterbury region and the rest of NZ. The first vineyards planted in 1976 and Pegasus Bay established in 1986. 

Upon release the wine is bright ruby in colour, the bouquet a rich tapestry of both red and dark fruit, as well as savoury notes. Pierre Ponnelle was a well known figure of Burgundy in the 19th century. Born in 1847 he spent his youth in Beaune and later went on to study in Germany. Pierre Ponnelle, however, was above all passionate about oenology. He then returned to Beaune in 1875 and founded his house as wine merchant.

Pond Paddock (Martinborough) 2015 Pinot Noir

Daniele tends the vineyard with the assistance of Simone Amorese, a winemaker from Italy who lives on the property, and Paul Mason has been contracted to make the Pond Paddock wine. In 2014, the 4,000 vines yielded 6 tonnes of fruit to make approx. 550 cases of wine. The smaller 2015 harvest saw 2.5 tonnes harvested to make around 230 cases

This Waipara winery has been called the one to watch and they really are.
